Nigori
Nigori sake, often referred to as “unfiltered sake,” is a unique and distinctive type of sake known for its cloudy appearance. The term “nigori” roughly translates to “cloudy” in Japanese, which perfectly describes its signature look. While it is technically filtered, the process used for nigori is different from that of standard sake. Instead of using a fine mesh filter, a coarser mesh is employed after fermentation, allowing fine rice particles, rice solids, and some residual fermentation elements to remain suspended in the liquid. This results in a creamy, opaque texture that is both visually striking and delightful in taste. Nigori sake has a sweet, smooth, and slightly milky mouthfeel, often with fruity or floral notes that make it a refreshing and indulgent drink. The unfiltered rice particles add a fuller, richer texture compared to clear sake, offering a unique drinking experience.

Their approach to making Junmai Daiginjo sake focuses on achieving the highest level of refinement, and this is evident in their meticulous methods, such as the centrifuge pressing technique. By using no pressure to extract the sake liquid from the rice solids, they are able to preserve delicate flavors and ensure a cleaner, more precise product.
The numbers on Dassai sake labels — often seen as “23,” “39,” or “45” — refer to the percentage of the rice grain remaining after polishing. A rice polishing ratio of 23%, for example, means that only 23% of the grain remains, with the rest polished away. This process eliminates impurities and outer layers, allowing the more refined starch at the center to shine through, resulting in a sake with a light, delicate, and sophisticated flavor profile. Lower polishing ratios like “23” are typically associated with ultra-premium sakes that offer elegance, while higher numbers like “45” indicate a more robust and fuller-bodied sake.
